Sweet Potato Nachos

Finally, a healthier way to enjoyed loaded nachos! If you’re a fan of sweet potato fries, you will LOVE this recipe! Feel free to get creative with toppings. In my opinion – the more, the merrier! Use plain Greek yogurt as a healthy alternative to sour cream for dipping.

Ingredients

  • 3 large sweet potatoes, peeled & sliced

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 2 TB olive oil

  • salt & pepper

  • Optional Toppings
  • refried beans

  • sweet corn

  • black beans

  • olives

  • chopped cilantro

  • shredded Mexican or cheddar cheese

  • pico de gallo

  • chopped peppers

  • chopped onion

  • jalapeños

  • sour cream

  • guacamole

  • salsa

Directions

  • Preheat oven to 425 degrees. Spray a baking sheet with non-stick cooking spray.
  • Peel & slice potatoes (thin) with mandoline or sharp chef’s knife.
  • In a bowl, toss the sweet potato chips with olive oil, paprika, garlic powder, salt & pepper. Spread evenly onto prepared pan.
  • Bake for 20 minutes and use a spatula to flip the chips, and then back for another 15-20 minutes or until crisp.
  • Take chips out, and add all toppings over the chips. Return back to oven until cheese melts, about 5-10 minutes. Serve warm.
