Traeger One-Pan Loaded Queso

I never realized how much I loved queso until I moved to Texas! It’s truly a staple at any gathering or party, haha! I love this recipe because you only need one disposable pan – and you can even serve it in that pan, too! You by no means *need* a Traeger or smoker for this recipe, it will taste amazing made in the oven, too! Get ready for this loaded queso to be gone in seconds! 

Ingredients

  • 2 lb. Velveeta cheese, cubed

  • 1 bag bag shredded Mexican cheese

  • 2 lb. ground meat (beef, sausage, turkey, chorizo, chicken)

  • 2 medium tomatoes, chopped

  • 2 cans mild chopped green chiles, undrained

  • 1 cup jalapeno slices (optional, for extra heat!)

  • 2 TB minced garlic

  • 3/4 cup chopped yellow onion

  • 1/4 cup fresh cilantro, chopped

Directions

  • If using a Traeger, preheat smoker to 225 degrees. If using an oven, preheat to 300 degrees.
  • Grease disposable 9×13 aluminum pan.
  • Prepare ingredients. Chop Velveeta cheese into small cubes. Cook meat & season as desired (add garlic into meat), chop & combine tomatoes, green chiles and onion. (you can also use pre-made pico de gallo for a short cut!). Drain excess liquid from jalapeño slices.
  • Place all ingredients into pan. It’s okay if they slightly combine – all ingredients should be snug together in pan!
  • If using a Traeger, cook the queso for about 30 minutes on 225 degrees, stirring occasionally. Then, increase temperature to 350 degrees to cook for another 20-30 minutes, stirring occasionally. If using a oven, cook at 300 degrees for 30 minutes, stirring occasionally.
  • Remove from smoker or grill, transfer into serving dish if desired, garnish with fresh cilantro and serve immediately with tortilla chips or Fritos!
