Low Carb Burger-In-A-Bowl

I first stumbled across a version of this recipe on Pinterest a couple of years ago – and ever since, it’s been a dinner staple in our house! What I love about it, is that you can make it catered to how *you* like your burgers – because that’s what it is! It’s a lower carb, healthier alternative to a burger and I’m telling you: the flavors will give you that same exact satisfaction that a burger does. You’ll never need that dang bun again! What makes it REALLY amazing = the sauce. So don’t skip out on the homemade burger sauce! This is a great dinner option for a busy weeknight…you can even prep the sauce & ground beef ahead of time and throw it together in minutes!

Ingredients

  • 6-8 oz. ground beef

  • 2 small heads romaine lettuce

  • 1.5 cups cherry tomatoes

  • 1/2 cup hamburger dill pickles

  • 1 cup sliced red onion

  • 6 slices of bacon, cooked & chopped

  • 1 cup shredded cheddar cheese

  • 2 TB garlic powder

  • salt & pepper to taste

  • 1 TB olive or coconut oil

  • 1/2 tsp worcestershire sauce

  • Burger Sauce
  • 1/2 cup miracle whip or mayo (I prefer using miracle whip!)

  • 1/4 cup ketchup

  • 2 tsp granulated sugar

  • 1 tsp white vinegar

  • 1/4 tsp dried minced garlic

  • 2 tsp dried minced onion

  • salt & pepper to taste

Directions

  • In a medium skillet, cook ground beef & break it up as it cooks. Add in garlic powder, worcestershire sauce, olive oil and salt & pepper. Continue to cook until the meat is fully browned. Once cooked through, remove the meat from the heat & drain any excess grease. Set aside.
  • In a medium size bowl or plate, layer the chopped romaine, meat, tomatoes, pickles, onion, cheese, and bacon.
  • For the burger sauce, combine all ingredients into a small mixing bowl and mix until fully combined. Drizzle over salad & store any remaining/extra sauce covered in the fridge.
